What temperature should my walk-in cooler and freezer hold?

Refrigerated food storage needs to sit at 4°C (40°F) or colder, and frozen storage at -18°C (0°F) or colder. Those are product temperatures, not air temperatures, and a box that reads 4°C at the wall thermostat can still have warm spots near the door or under poor airflow. If your logs are creeping up by a degree or two over a few weeks, that is a fault developing, not a calibration quirk.

Why is my walk-in icing up?

Ice on the evaporator is normally a defrost problem — a failed defrost heater, a stuck termination sensor, or a timer set for fewer cycles than the box actually needs. Ice on the floor or ceiling near the door is usually warm humid air getting in: a torn gasket, a door that no longer closes square, or a missing strip curtain. The second kind is cheap to fix and expensive to ignore, because all that moisture ends up on the coil.

How often should commercial refrigeration be serviced?

Twice a year suits most restaurant and retail equipment, and quarterly is reasonable for kitchens running hard or sites where the condenser sits in a greasy exhaust stream. The single highest-value item is condenser cleaning: a coil blanketed in dust and grease raises head pressure, which raises the power bill and shortens compressor life long before it causes a callout.

My cooler has failed. What should I do before you arrive?

Keep the doors shut — a loaded walk-in holds temperature far longer closed than most people expect. Move the highest-risk product to another box or to ice, record the time and the temperature you found, and check whether the condensing unit is running at all. That last detail tells us over the phone whether we are likely dealing with a control fault, a power supply problem or a refrigeration failure, and what to bring.

Do you service ice machines and beverage coolers?

Yes. Ice machines, bottle coolers, back-bar units, undercounter fridges and prep tables are all part of the same visit. Ice machines in particular benefit from being on a schedule, because scale and biofilm build up quietly and show first as reduced production rather than as a breakdown.
